Easy Crock Pot Chili Recipe

I first made this recipe for Halloween dinner.  A co-worker told me they make Chili & Pumpkin Pie every year as a Halloween family tradition and it sounded delicious.

This recipe is super easy and something you can quickly put together and let the crock pot do the rest.  I like the idea of a meal cooking all day because you have it figured out early and can look forward to it for the rest of the day.  I like Chili because it is hearty, full or protein & filling.

Chili Ingredients

  • 2 pounds Ground Beef
  • 2 (16 ounce) cans Kidney Beans, rinsed and drained
  • 2 (14.5 ounce) cans Diced Tomatoes, undrained
  • 1 (8 ounce) can Tomato Sauce
  • 2 medium Onions, chopped
  • 1 Green Pepper, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Chili Powder
  • 2 teaspoons Salt
  • 1 teaspoon Pepper
  • Shredded Cheddar Cheese (optional)
  • Friotos (optional)
  • Sour Cream (optional)

Onions & Green Pepper

Step 1: Cut up vegetables and brown ground beef.  I use the 90/10 ground beef and rinse in a collander to get the extra fat off.

Step 2: Rinse kidney beans.  Mix ground beef, kidney beans,diced tomatoes, tomato sauce, onions, green pepper, garlic, chili powder, teaspoons & pepper together in crock pot.

Step 3: Cover crok pot and cook on low for 8-10 hours or on high for 4 hours. Garnish individual servings with cheese, fritos or sour cream if desired.
